How to Choose, Store and Prepare Asparagus
Asparagus aka “Springtime Spears” contain fiber, vitamin C, potassium and folacin (B vitamin necessary in blood and cell growth) – in generous amounts. Whenever shopping for asparagus, choose only the stalks that are firm and fresh, with their tips compact and still closed. At home place the asparagus stalks in upright glass jar with about an inch of water in it. Cover the arrangement with plastic bag or wrap and refrigerate. Before preparing, trim the ends of the stems. If you think that’s necessary, you can peel the lowest part of the stems. Ways to cook and eat springtime spears: • One way to prepare asparagus is to steam it until it’s crisp-tender. • If you simmer your meat slowly with fresh, chopped onions, then adding asparagus a few minutes before the meat is done, makes a delicious veggie side dish. Adding green beans to that mix is optional but also tastes great. • And if you’re not ready or willing to let go of stir-fried foods, cut the stems of asparagus diagonally into two-inch pieces and sauté over medium heat in oil or butter for 3 to 5 minutes. • Asparagus also tastes good as a salad: cooked and chilled with your favorite kind of dressing or vinaigrette. • Love barbecue? Lightly coat the spears with extra virgin olive oil and grill them. • Because of its delicate taste, leftover cooked asparagus can be added to any kind of pasta dishes, meat dishes, omelets, all kinds of salads and more. Simply cut and enjoy!
